Our Food
We’re the first to admit that this ain’t your grandma’s cooking. We probably the most unusual restaurant in Seattle. But that also makes us the healthiest. Here’s why:
- Our food is 100% vegetarian. This is in alignment with our No Harm philosophy.
- Our food is 100% dairy-free. Sure, call it vegan, lactose-free, or whatever suits you. The point: no animal products of any kind.
- Most of our food is considered raw. That means that it hasn’t been cooked, and in most cases the only heat that’s been applied is what little it receives when put in a blender from moving so fast! The exceptions include our grains, which we put into a rice cooker, and the following three ingredients: maple syrup, wheat-free tamari, and soy lecithin. Our flax crackers, bella bugers, macaroons, and kale chips are dehydrated at 115 degrees.
- Our food is wickedly nutritious and good for you. Everything is made from fresh vegetables, fruits, nuts, seeds, herbs, natural sweeteners, and seaweeds. Nothing artificial.
- The sweeteners we use include dates, stevia, and in some cases, agave or maple syrup.
- The only food we have on our menu that has ever had heat applied to it is our grains (red Bhutanese rice and quinoa), maple syrup, soy lecithin (used in some of our desserts), and wheat-free tamari.
